All our biltong comes from grade A grass-fed Aberdeen Angus beef cattle. Our biltong is made using premium silversides, sourced in the stunning Cairngorm mountains of Aberdeenshire. This makes our biltong lower in fat and tender. There's no secret to making good quality biltong, you simply must use good meat and have an eye for detail: too many people get poor results by cutting corners. You can be assured we do not use offcuts for our biltong, we always remove sinew (the tough layer of skin that makes biltong chewy) to leave strips of meat, spiced the right way and slow dried for 4 days to finish up as delicious medium wet biltong.
