Savanna South African Lamb Curry

Warm up your winter evenings with the rich, aromatic flavors of our Savanna South African Lamb Curry! This hearty dish combines tender lamb shank stew pieces, the sweetness of apricot jam, and the bold spices of Werner’s Durban Curry, all simmered to perfection in Rooibos tea. Perfectly paired with fluffy rice and a dollop of chutney, it’s the ultimate comfort meal to chase away the cold. 

Serves 4

Ingredients:

  • 1kg Lamb Shank Stew Pieces (2 packs)
  • 50 ml Apricot Jam / Mrs Balls Chutney
  • 1 teaspoon sugar
  • 250 ml Rooibos Tea (not too strong)
  • 3 medium onions, cut into slices
  • 15ml olive oil
  • 2 clove of Garlic, chopped finely
  • 2 Packets of Werner’s Durban Curry
  • 1 tablespoon of flour
  • 15ml vinegar or lemon juice
  • Salt and pepper to taste.

Instructions:

  1. Cut the lamb shank pieces into smaller blocks
  2. Heat up a cast iron pot
  3. Fry the onions in butter / oil until light brown and soft.
  4. Add the lamb, apricot jam/chutney, and garlic.
  5. Add the spice mix and fry for a minute.
  6. Add the Rooibos Tea, cover the pot with a lid, and simmer for approximately 1.5 / 2 hours or until the lamb is tender.
  7. Mix the flour, vinegar, salt, pepper, and a teaspoon of sugar.
  8. Add the flour mix thirty minutes before serving.
  9. Remove the cardamom, cloves and cassia bark before serving.

Serve with rice and chutney.
